Ken Albala, Professor of History und Director of Food Studies an der University of the Pacific in Kalifornien, ver\u00f6ffentlichte bereits 22 B\u00fccher \u00fcber die unterschiedlichsten Epochen der europ\u00e4ischen K\u00fcche wie \u201e<em>Eating Right in the Renaissance\u201c<\/em>, \u201e<em>Food in Early Modern Europe\u201c <\/em>oder \u201e<em>Cooking in Europe 1250-1650\u201c<\/em>. Albala wird als Gastprofessor in einem Liberal-Arts Kurs der Webster University \u00fcber die Kulinarik und deren Bedeutung in der Fr\u00fchen Neuzeit unterrichten und die Studierenden Geschichte kosten und schmecken lassen. Besuche namhafter Experten und Wissenschaftsgr\u00f6\u00dften konnten so in den letzten Jahren bereits realisiert werden: Philip Zimbardo, Stanford University, Andi Markowitz, University of Michigan, Diane O\u2019Donoghue, Tufts University und Joel Stern, University of Chicago.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Dr. Ken Albala \u2013 Biography <\/strong>Ken Albala is Professor of History at the University of the Pacific and author or editor of 22 books on food including <em>Eating Right in the Renaissance<\/em>, <em>Food in Early Modern Europe<\/em>, <em>Cooking in Europe 1250-1650<\/em>, <em>The Banquet, Beans <\/em>(winner of the 2008 IACP Jane Grigson Award), <em>Pancake, <\/em>and recently <em>Grow Food, Cook Food, Share Food <\/em>and <em>Nuts: A Global History<\/em>. He was co-editor of the journal <em>Food, Culture and Society <\/em>and has also co-edited <em>The Business of Food, Human Cuisine<\/em>, <em>Food and Faith <\/em>and edited <em>A Cultural History of Food: The Renaissance <\/em>and <em>The Routledge International Handbook to Food Studies<\/em>. Albala was editor of the Food Cultures Around the World series, the 4-volume <em>Food Cultures of the World Encyclopedia <\/em>and is now series editor of Rowman and Littlefield Studies in Food and Gastronomy for which he has written <em>Three World Cuisines: Italian, Chinese, Mexican <\/em>(winner of the Gourmand World Cookbook Awards best foreign cuisine book in the world for 2012). He has also co-authored two cookbooks: <em>The Lost Art of Real Cooking <\/em>and <em>The Lost Arts of Hearth and Home<\/em>. His latest works are a <em>Food History Reader: Primary Sources <\/em>and a translation of the 16th century cookbook <em>Livre fort excellent de cuysine<\/em>. His 36 episode course Food: A Cultural Culinary History is available on DVD from the Great Courses company. Albala has also just finished editing a 3 volume encyclopedia on <em>Food Issues <\/em>which will be published in the summer of 2015.<\/p>\n<p>Albala is the Program Director for the new Master of Arts in Food Studies program, located at Pacific&#8217;s San Francisco campus.
